Brandy Sauce Recipes for Christmas Pudding
Traditional Hot Brandy Sauce
1/2 a stick of butter (2oz)
2 tablespoons of plain flour
1 cup of milk
1/2 cup of sugar
2-3 tablespoons Brandy or Marsala.
Mix milk and sugar together in a separate bowl
In a cooking pot, melt butter of medium heat.
Add flour and stir constantly for 1 minute
Add milk mixture and continue stirring until it begins to bubble.
Remove from heat and stir in Brandy or Marsala.
Pour over reheated portions of Christmas Pudding

Lighter, Cold Brandy Sauce
1/2 a stick of butter (2oz)
2 tablespoons of plain flour
1 cup of milk
1/2 cup of sugar
2-3 tablespoons Brandy or Marsala.
1 cup heavy cream
Mix milk and sugar together in a separate bowl
In a cooking pot, melt butter of medium heat.
Add flour and stir constantly for 1 minute
Add milk mixture and continue stirring until it begins to bubble.
Remove from heat and stir in Brandy or Marsala
Cool, stirring occasionally to prevent skin forming, or place a piece of plastic wrap on the surface. Chill in refrigerator
Whip 1 cup of heavy cream and fold into the above mixture just before serving.
Your pudding may be reheated by placing into a similar size aluminum or ceramic bowl.
Cover tightly with foil and place into a larger size saucepan with water that comes 2/3 of the way up the bowl.
Simmer for 1 hour.
Alternatively, you may microwave slices of the pudding before serving.
